~Thanksgiving Treats Abound in Abundance~

 Grease 1 - 8" pie pan with butter
Preheat oven 350 degrees

Lightly whip the following ingredients in a medium sized bowl ~

1/4 Cup butter - melted and cooled
 2 Eggs slightly beaten
1 Cup milk
1 Cup sugar - white & granulated
1/4 Cup all purpose flour
1/2 Teasp. vanilla
1 Pinch of salt
1/4 Teasp. baking powder
1 Cup shredded coconut

Lightly whip the liquid ingredients by hand
Add the dry ingredients gradually whipping also by hand.
Pour into greased pie tin

Bake for 45-60 minutes - depending on oven - a slightly crisp edge will form and the top will be lightly browned.
A knife inserted in the center should come out clean but moist when the pie is done.


This pie has a custard type texture inside - forms its own crust - smells divine and tastes great - just ask my hubby - this is HIS favorite dessert during the holidays.
